Turkey Black Bean Chili

Turkey Black-Bean Chili  (serves 6-8)
 
Ingredients:
1 lb ground raw turkey
1/2 cup chopped onions
1 (28 oz) can whole tomatoes w/ juice crushed
1(28oz) can diced tomatoes w/juice
2 (15 oz) cans black beans (rinsed and drained)
1 (4oz) can diced green chilies (mild)
1 Tbsp instant beef bouillon
1/4 tsp garlic powder
4 tsp chili powder
1 tsp ground cumin
 
1. Spray pot w/cooking spray
2. Brown crumbled turkey and onions in pot until meat is cooked.  Drain
3. Add ttomatoes, beans, chilies, beef bouillon, garlic, chili powder and cumin.  Stir well.
4. Heat to boiling, stirring often.  Reduce heat to low and simmer, stirring occasionally. (about 30 min)
5. Compliment with a side or sour cream and cheese. 
6.  Transfer to a crock pot to keep warm.

Caramel Apple Slab Pie

A thin and flaky melt in your mouth crust topped with juicy apples and a crisp topping. It is drizzled in homemade caramel and perfect for feeding a crowd!
Ingredients
  • 2¼ cups all-purpose flour
  • ¾ teaspoon salt
  • ⅔ cup butter-flavored shortening
  • 8 tablespoons cold water
  • ⅔ cup sugar
  • ⅓ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 3½ pounds granny smith apples, peeled, cored, and cut into ¼-inch-thick slices (10 cups)
  • Crumb Topping:
  • 1 cup quick-cooking rolled oats
  • 1 cup packed brown sugar
  • ½ cup all-purpose flour
  • ½ cup butter
  • Homemade Caramel:
  • 1 cup Brown Sugar
  • 4 Tablespoons butter
  • ½ cup Half-and-half
  • 1 Tablespoon Vanilla
  • Pinch Of Salt
Instructions
  1. Spray a 15x10x1 inch pan with non stick cooking spray and set aside. To make the dough, In a large bowl combine flour and salt. Using a pastry blender cut in the shortening until it resembles coarse crumbs. Sprinkle 1 tablespoon of the cold water over the mixture and toss with a fork. Repeat using 1 tablespoon of water at a time until it is moistened and knead the dough into a ball.
  2. Preheat oven to 375 degrees. On a lightly floured surface, roll dough into a 19x13-inch rectangle. Wrap it around the rolling pin and unroll it into the prepared baking pan. Ease dough into the pan and up the sides, being careful not to stretch it. Trim dough to ½ inch beyond edge of pan. Fold dough edge over and flute as desired.
  3. In an extra large bowl combine the sugar, ⅓ cup flour, cinnamon and apples. Toss until coated. Spoon the mixture on the dough and spread evenly.
  4. To make the crumb topping: In a large bowl, stir together quick-cooking rolled oats, packed brown sugar, and all-purpose flour. Using a pastry blender, cut in butter until topping mixture resembles coarse crumbs. Sprinkle on top of apples.
  5. Bake for 40-45 minutes or until apples are tender. If it is starting to brown to fast, cover the top with foil the last 5-10 minutes. Cool slightly.
  6. To make the homemade caramel: Mix all ingredients in a medium saucepan over medium-low to medium heat. Cook while whisking gently for 5 to 7 minutes, until thicker. Turn off heat. Serve warm or refrigerate until cold. Drizzle on top of apple slab pie.

Apple Crisp

Ingredients

  • 2 cups all-purpose flour
  • 2 cups rolled oats
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

  • 1 1/2 cups packed brown sugar
  • 1 1/2 cups butter
  • 2 quarts peeled, cored and sliced apples

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the flour, oatmeal, cinnamon, nutmeg and brown sugar. Cut butter into mixture until crumbly.
  3. Take half of the mixture and pat it into the bottom of a 9x13 inch baking dish.
  4. Cover crumb mixture with apple slices, then sprinkle apple slices with remaining crumb mixture.
  5. Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes or until apples are tender.

Mountain Dew Apple Dumplings

Mountain Dew Apple Dumplings

 Ingredients
2 (8-count) cans refrigerated crescent rolls
3 to 4 tart apples, peeled and slice into 16 wedges
1/2 cup butter, melted
1-1/2 cups sugar
1 teaspoon cinnamon
1 (12-ounce) can Mountain Dew soda

Directions
Heat oven to 350°F. Spray 13×9-inch dish with cooking spray. Separate dough into 16 triangles. Place apple quarter on shortest side of each triangle. Roll up each, starting at shortest side, and rolling to opposite point. Place point side down in prepared pan.
In small bowl, stir together melted butter, sugar and cinnamon; spoon evenly over crescent-wrapped apples. Pour Mountain Dew over all.
Bake at 350°F. for 35 to 45 minutes or until apples are tender. Serve warm with sauce. Top with whipped cream or vanilla ice cream if desired. Makes 16 dumplings.
